Italian Fried Pork Chops

We’re finally making some progress on all the projects we have going on around the house. This past week we started on our vintage travel trailer’s seats and cushions. I’ve also started sewing the new curtains. It’s so exciting after all the woodwork and repairs to start doing the fun decorating stuff. We can’t wait for our fist camping trip. We’re going to start making reservations at all of the local state parks this week too.

Because we’ve been so busy with things, including all my son’s schools activities, it doesn’t leave a lot of time for dinner. In fact one of my favorite decor items I added to the camper was a wall plaque that says, “If you are what you eat, then I’m fast, cheap and easy.” That couldn’t be more true nowadays. I’m always on the lookout for nutritious and wholesome dishes that I can serve my family that are also budget friendly.

Recently I’ve found these Birds Eye® Protein Blends at Walmart. They make wonderful side dishes for a quick dinner. The best part is I can buy several packs and store them in the freezer and have them on hand whenever I need them. They make a great addition to simple dinners like steamed fish, grilled chicken or baked pork loin.

Yield: Serves 4

Italian Fried Pork Chops

Ingredients:

  • 4 boneless pork chops
  • 1 egg, whisked
  • 1 tablespoon Italian Blend Spices
  • 3 tablespoons Parmesan cheese
  • salt and pepper
  • 1 cup AP flour
  • vegetable oil for frying

Directions:

Heat oil in large skillet to 350° about 1 inch deep. Add Italian seasonings and salt and pepper to egg and mix well. Dip chops in egg mixture. Add Parmesan cheese, salt and pepper to flour. Dip chops in flour and bread well. Place breaded chop in hot oil and fry until golden, turing once, until internal temperature is 160°.

Place fried pork chops when done on paper towels to drain. Serve and enjoy!
