It’s Friday and we’re so looking forward to the weekend. It’s been a long, busy week full of things to do with the kids, deadlines and errand after errand to run. And with all the things to do, I’ve been without my lifeline (cell) for a total of 5 days now. My cell phone took a dive in the deep end of the pool and promptly died, permanently this time. I would have thought I’d be okay without that silly phone, but it’s been hard. I really didn’t realize just how dependent I’d become on it.

Hopefully I’ll get a new phone in a few days, and things will be back to normal. I decided to save a few $ and order one on eBay, but the seller is taking their sweet time with the delivery. So to try and keep my sanity this past week, I’ve been cooking easy comfort foods for the family. You know those simple feel good, one pot meals that are super easy to make? That’s what I’ve been cooking up. And this BLT noodle dish was my absolute favorite I made this week. It’s so simple and amazingly delicious!

To start this dish I just cooked some bacon until it was crisp. Then for the noodles, I use No Yolks extra broad. These noodles are so delicious and versatile. You can use them for way more than just stroganoff or casseroles. They’re great in simple noodle dishes like this one as well as soups, noodle skillet meals and unexpected dishes like Sriracha Cheesy Noodles or whatever else your imagination can dream up! No Yolks is a healthy egg noodle alternative, made from egg whites and no cholesterol, and are low in fat and sodium.

A quick and easy recipe for BLT Noodles.

Ingredients:

  • 1 (12oz) package No Yolks® Extra Broad Egg Noodles
  • 12 strips bacon, cooked crisp and chopped
  • 1 (9oz) bag fresh spinach
  • 1 pint cherry tomatoes, halved
  • 1 (6oz) jar basil pesto
  • Directions:

    Prepare No Yolks® Extra Broad Egg Noodles according to package directions. When noodles are ready, add fresh spinach to noodles and cooking water. Stir in just until wilted (this only takes a few seconds, then drain. Place noodles and wilted spinach in a large bowl.

    While noodles are cooking, cook bacon. After bacon is cooked crisp, drain on paper towels and chop.

    Combine No Yolks® Extra Broad Egg Noodles, wilted spinach, bacon, halved tomatoes and pesto in large bowl. Toss to combine.
