Chicken Caesar Pasta Salad

This post sponsored by DaVinci® pasta. All thoughts and opinions 100% mine.

Last week was our first week of school and I’m so happy to have a few hours with the kids out of the house. But most importantly, they are way happier to be in school, with friends and learning new things.

The first few weeks of school are always so crazy busy with errands, parent meetings and driving the kids where they need to go. And with a baby on the way in less than three months, I’m a little stressed.

Because our family is so busy, I am in a constant search for super easy and delicious meals that the whole family will enjoy. They have to require minimum dishes, fresh ingredients and must be easily customizable to what I have on hand at the time.

This simple chicken Caesar pasta salad checks all those boxes. The only main ingredients you have to have are pasta, chicken, lettuce and Caesar dressing. You can then add in what you like, or have on hand to make it even more delicious!

For this recipe I start with DaVinci® ditilini pasta. It’s a small short pasta that works great in soups and pasta salads like this too. I also use chopped romaine, chopped tomatoes and chopped leftover grilled chicken.

You can use grilled and ready chicken or leftover chicken. We usually grill on the weekend throughout the year, and I love to also grill up some chicken along with whatever I’m making at the time, to use in easy recipes during the week.

I then just add some Caesar salad dressing.

Then some croutons and Parmesan cheese.

Then I toss well and that’s it!

This recipe is super easy to make on hectic weeknights. You can have the kids help prep the veggies and add to the salad bowl while the pasta is cooking. When the pasta is done, just toss everything together and dinner is done in about 10 minutes! Now that’s Fun & Done!

DaVinci® Spaghetti, Bowties and Elbows are my usual go to easy family pasta dishes. But I also find some of their more specialized pastas at my local grocery store and love to try them like this ditilini pasta.

You can buy DaVinci® pasta at your local Tops! Supermarket. Be sure to stop by the DaVinci® Facebook page for some more unique pasta recipes too!
