Lush Coconut Cocktail

Summer is almost over, and Labor Day weekend is just a few days away. We’ve got one more little get-away planned to see some family this weekend, and I can’t wait. We’re all going to one of my favorite Florida state parks, the Florida Caverns. My husband and I have such fond memories of going as kids, and we can’t wait to share that same experience with our son.

The park is a maze of limestone caverns that are artfully illuminated. It’s so beautiful. I even remember a limestone formation that looks like a wedding cake, and people actually get married down there, or at least they use to. My only hope is my son doesn’t see a bat at the beginning of the tour and get scared.

To celebrate the end of summer,  I wanted to share one of my favorite cocktails with you that I’ve developed with Blue Chair Bay Rum. I first used this rum in my Sweet Gypsy Cocktail, and then later in my Salty Kiss Cocktail. I have to say that it’s the best rum I’ve ever tasted and makes the most incredible cocktails.

For this cocktail I wanted something fun, with a soft fruity flavor and delicate spice notes. I wanted to create something that screamed this was the best summer ever, without being too sweet, too creamy or overily indulgent. So I came up with what I like to call the “lush coconut.”

If you were a coconut and a complete lush, what would you taste like? I think a little spicy, a little sweet, and completely irresistible. So for this cockail I start with Blue Chair Bay Coconut Spiced Rum. It has a delicate coconut flavor and just the right amount of spice, without being too overpowering. Then I add Licor 43, which has a primarily citrus and vanilla flavor with lots of subtle spice notes. To finish it off, I add some coconut water which has a slightly sweet and nutty flavor. The end result is summer perfection that everyone will love.

It’s amazing.

The Coconut Spiced Rum, featured in this cocktail, is the new way to spice, where cinnamon, nutmeg and clove meet beach-aged rum and natural coconut for a whole new way to experience the islands. This rum works well in many cocktails, and also taste amazing just mixed with juice, soda or on the rocks.

Yield: 1 cocktail

Ingredients:

1 oz Blue Chair Bay Coconut Spiced Rum
1 oz Licor 43
2 oz Coconut Water

Directions:

Combine ingredients in a shaker and pour over ice.
