Peanut Butter and Jelly Fruit-Filled Waffle Tacos

My kids just completed their first week of school this week. We had such a wonderful summer filled with lots of adventures and restful getaways. But I’m so glad the kids are back in school, and so grateful for the wonderful teachers they have this year. It’s going to be a great year!
My son started 5th grade this year and my daughter just started preschool. I don’t know who was more excited. They were so eager for their first day of school. I packed their lunch, dressed them in their new school clothes and dropped them off in the car line.
When it comes to school lunches, I like to keep things simple. I would say 99% of the time I’m making them a peanut butter and jelly sandwich. They love PB&J and so do I! But to make things a little more exciting, I often put PB&J on different things like hamburger or hot dog buns and add a little fruit too. Sometimes I use flour tortillas and make roll ups or quesadillas that they love too.
For their first day of school I wanted to get creative, so I made their beloved PB&J with a waffle instead of bread and added some fresh fruit! I made these cute little waffle tacos that fold up and then just filled them with fresh berries.
They were such a wonderful treat for the kids on their first day back to school. They loved having something delicious and familiar but that was also fun and different than just a plain sandwich.
To make these tacos I used Jif® Natural Peanut Butter Spread and Smucker’s® Natural Strawberry Fruit Spread. Jif Natural Peanut Butteris our favorite type of peanut butter. It’s so delicious I may or may not sneak a spoonful or two as an afternoon snack.
It’s my favorite feel-good snack, and has been as long as I can remember. My mom has lots of pictures of me as a kid being caught with a spoon and the Jif Peanut Butter jar. Jif Peanut Butter is and always has been my chocolate. And my daughter loves Jif too, because I’m now catching her with the Jif jar too!
I feel good as a parent about giving my kids Jif + Smucker’s for lunch. It’s quick and easy for me and delicious for them. It is super versatile beyond the basic sandwich like I have shown here and can be paired with all different kinds of fruits and veggies too!
And Smucker’s Natural Strawberry Fruit Spreadis the perfect pairing for this Jif Natural Peanut Butter. It’s sweet, delicious and spreads easily on sandwiches. Jif & Smucker’s are just better together!
I get a great price on both Jif Peanut Butter and Smucker’s Strawberry Jam at my local Walmart. I made sure to stock up when I was doing all my back to school shopping this month.
To make these fun little peanut butter and jelly tacos, I just take frozen waffles (you can also use homemade) and smear them with peanut butter on one side and jelly on the other half.
Then I just fill with fresh fruit. You can use any type of fresh fruit you have on hand like sliced bananas or apples. Here I used fresh berries.
These are super fun and so delicious! They make such a fun packed lunch for the kids. Just pair it with celery sticks, apple slices and a few cheese slices and lunch is done!
