Pumpkin Banana Bread with Spiced Cream Cheese Glaze
Even though it’s holiday time, I still like to make pumpkin themed recipes. I mean who doesn’t love pumpkin? And I for one just didn’t get enough pumpkin flavored treats last month, so I’m still making them. Today I’m sharing one of my favorite easy pumpkin recipes, a pumpkin bread.
I’ve made this bread plain and topped it with a cream cheese glaze, but you can also add raisins, nuts or a combination of the two to the is recipe.
For this bread, I start with a basic banana bread recipe, and add 1 cup of pumpkin puree. I use canned pumpkin puree, it’s an easy shortcut and a little sweeter than roasted fresh pumpkin. If you opt to use fresh pumpkin, simply boil or roast fresh pumpkin until it’s tender and then mash it all up.
Instead of the ordinary banana bread spices, I add pumkin pie spice. It makes this bread incredibly fragrant and so delicious. After it comes out of the oven, I add a simple spiced cream cheese glaze that makes this bread amazing.
This bread goes wonderfully with coffee and fresh fruit for breakfast. I like to take a slice of this bread and top it with a few pats of butter and toast it in the toaster oven for a few minutes. It’s absolute perfection!
Yield: 6 servings
Pumpkin Banana Bread with Spiced Cream Cheese Glaze
Ingredients:
- 2 cups All Purpose Flour
- 1 cup Sugar
- 2 cups mashed banana, about 2 medium Very Ripe Bananas
- 1 cup Pumpkin Puree
- 2 large Eggs
- 1/4 cup butter, melted
- ½ teaspoon Salt
- 1 ½ teaspoons Baking powder
- 1 teaspoon Baking Soda
- 2 teaspoons Pumpkin Pie Spice
For the cream cheese glaze:
- 4 ounces cream cheese, room temperature
- ½ cup confectioners' sugar
- ½ teaspoon pumpkin pie spice
Directions:
Heat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray. In a large bowl whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
In another large bowl combine eggs, mashed banana, pumpkin, sugar, and butter. Add egg mixture to flour mixture. Stir just until combined, batter will be lumpy. Pour batter into loaf pan.
Bake for 55 to 60 minutes or until deep golden brown, or until bread passes the toothpick test. Let cool.
For cream cheese topping, combine cream cheese, powdered sugar and pumpkin pie spice in a medium bowl. Mix well and spread over warm pumpkin banana bread. Let cool completely before slicing. Garnish with additional pumpkin pie spice if desired.
