Ranch Chicken Salad
We DVR everything now. I can’t remember that time years ago when we all used TV Guides. We had to schedule our lives around our favorite TV shows, and if we missed an episode of a favorite show, we had to wait months before it came back on as a re-run. We’re spoiled, aren’t we? Anyway when we were watching one of our favorite DVR’d shows, Suburgatory last week, the neighbor mom was had made her famous chicken salad. And what made it so great? Ranch dressing of course.
I couldn’t wait to make my own version of a Ranch chicken salad, because I knew it would be wonderful.
I wanted to make my chicken salad packed full of vegetables. I know this is kind of vegetable overload, but you can adjust the chicken/veggie ratio to your own tastes. For the vegetables, I added all the ones that we love to dip in ranch dressing cut up in little pieces.
This salad made a wonderful vegetable packed sandwich. And it’s also great over a bead of fresh baby greens.
Yield: Serves 4
Ranch Chicken Salad
Ingredients:
2 cups shredded chicken
1 cup chopped broccoli
1/4 cup chopped red onion
1/2 cup red bell pepper
1/4 cup matchstick carrots
1/4 cup chopped celery
1/4 cup Hidden Valley ranch dressing
Directions:
Combine all ingredients in a large bowl and mix well. Refrigerate until ready to serve.
