Red Cabbage Salad with Cranberries

Here is a healthy alternative to those calorie laden side dishes on Thanksgiving, red cabbage salad. It has a sweet and sour flavor from agave and vinegar. I added dried cranberries and garnished it with fresh apples. It’s amazingly simple and a  perfect make ahead dish, because it’s so much tastier after marinating in the fridge for a day.

Red Cabbage Salad with Cranberries

1/2 head of red cabbage, shredded fine
1/2 cup cranberries
1/4 cup balsamic vinegar
3 teaspoons lemon juice
2 tablespoons agave nectar or honey
1/2 teaspoon kosher salt
1/4 cup olive oil
sliced apples for garnish


1. Add red cabbage, cranberries, vinegar, lemon juice, agave, kosher salt and olive oil to a large bowl. Toss well. Refrigerate for at least 15 minutes before serving.

2. For best results, make the day before. Serve salad garnished with freshly sliced apples.

    My first experience of eating red cabbage was a salad with a very good taste. Surely i do want to eat it again. This do look good and tasty, i will try this!

    This sounds really interesting. I have only had red cabbage shredded in green salads, so I’d like to give this a try. The cranberries definitely make it perfect for Thanksgiving.
