Spicy Roasted Chipotle Chickpeas

Here’s a quick snack that’s super easy to make and actually nutritious. I added chipotle chili powder to these chickpeas before roasting to add a kick of flavor.

Spicy Roasted Chipotle Chickpeas

Ingredients:

1 – 15 oz can chick peas (garbanzo beans) rinsed and drained
2 tablespoons olive oil
1/2 teaspoon chipotle chili powder
salt and pepper

Directions:

1. Preheat oven to 450 degrees. Combine chickpeas with olive oil, chipotle powder, salt and pepper. Toss well to coat and spread in a single layer on a cookie sheet.

2. Roast at 450 degrees shaking the pan or stirring peas a few times during the cooking process to ensure even browning. Roast for 30 – 40 minutes, or until crunchy and brown.
