For the past several months, I’ve been on a panini kick. Every day for lunch I make something different in my panini press. I hadn’t used my press for a couple of years, but a few months ago I pulled it out of the depths of the pantry and put it to good use again.
Today I made a simple spinach, artichoke and sun-dried tomato panini using Mezzetta® Sun-Dried Tomato Spread and Mezzetta® Grilled Artichokes. The tomato spread gave so much added flavor to my sandwich, while the grilled artichokes were just too good for words.
Mezzetta® has a whole line of different olives, peppers, sandwich spreads, pickled vegetables and different sauces. I especially love some of their peppers. They add a wonderful punch to deli sandwiches.

Yield:
1 sandwich 2 pieces of wheat bread Assemble sandwich. Place in panini press and cook until golden brown. Serve panini with a simple salad.Spinach, Artichoke & Sun-dried Tomato Panini
