Spinach Mushroom Fettuccine Alfredo  

We’ve been spending more time than ever in the kitchen. Before social distancing, we cooked quite a bit at home, but now we cook almost exclusively at home. In fact, I can’t even remember the last time we had take-out. And all that cooking sure does make a lot of dirty dishes!

Have you ever noticed that the most delicious recipes make the biggest, stickiest messes? You know like lasagna, sticky wings and Fettuccine Alfredo? These are some of my family’s favorite recipes, and also recipes that make huge sticky messes! But that’s okay when I have Palmolive® Ultra Strength and Scotch-Brite® Advanced Scrub Dots Non-Scratch Scrubbers to clean my cookware.

Palmolive and Scotch-Brite Advanced

This is my absolute favorite Fettuccine Alfredo recipe. I just realized I hadn’t shared it here before. It’s super simple to make and ready in no time at all. This makes a perfect recipe for busy weeknights and can be made with a simple garden salad and even some garlic breadsticks. And with the addition of spinach and mushrooms, it’s fancy enough for entertaining. You can even add some grilled chicken strips if you like too! 

For this recipe I just start with sautéing some mushrooms and garlic in a stick of butter until tender. Then I add a cup of cream and heat through. Next I add a bag of fresh spice or some frozen spinach and wilt it in. Then I just add a cup and a half of freshly grated Parmesan and melt it in.

Then I pour this Alfredo sauce over my cooked Fettuccine and add some chicken if I’m in the mood, or not. Then just toss to coat. It’s so freaking easy and so amazingly delicious you will never touch a jar of pre-made Alfredo again.

A quick and easy recipe for Spinach Mushroom Fettuccine Alfredo 

Ingredients:

1/2 cup butter
1 cup heavy cream
3 cloves garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
6 oz fresh or frozen and defrosted spinach
8 oz sliced mushrooms
fettuccine pasta

Directions:

Add butter, mushrooms and garlic to a large skillet. Sauté over medium heat until mushrooms are tender. Add cream and heat through. Add spinach and wilt in sauce.

In a separate large paucepot, heat water to a boil and cook fettuccine pasta according to package directions.

Add Parmesan cheese to cream sauce and whisk in. Pour spinach mushroom sauce over cooked pasta and toss well to coat.
