Spinach Tomato Soup
This is one of the easiest tomato soup recipes. All you have to do is add the ingredients to a soup pot and cook. The added spinach adds alot of nutrition and makes this soup more interesting than traditional tomato soup. I like to keep the spinach leaves whole, but you can chop them before adding to the soup if you prefer. I also add cream at the end to make it extra creamy. If you are watching your calories, you can easily leave this ingredient out. I usually make this soup in the crock pot. I just add all the ingredients to the crock pot, and turn on high. Its done in 2-3 hours. Just add the cream about 15 minutes before serving, and turn the heat to warm until you are ready to serve. I served this delicious tomato soup with grilled cheese sandwiches made under the broiler in the oven. I find that using the broiler to make all the grilled cheese sandwiches at one time is so much easier, and saves lots of time. I used french bread and Havarti cheese for these cute little sandwiches. It was a fun twist to use french bread for the sandwiches. These little sandwiches would also be a perfect appetizer for a party. You could do them in different cheeses to make a platter.

Spinach Tomato Soup Recipe
Ingredients:
1 lb fresh spinach, chopped or whole
2 cloves garlic, chopped very fine
1 28 oz can tomato sauce
1 28 oz can chopped tomatoes
1 quart vegetable or chicken stock
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/2 cup cream
olive oil
Directions:
Preheat a large soup pot. Add olive oil, and then add garlic. Saute over medium low heat, being careful not to burn, for 2-3 minutes.
Add all ingredients to the pot. Bring to a boil, and simmer for 20-30 minutes.
Add cream and heat through, but don't boil again.
Serve with grilled cheese or crackers.
