Yoplait® Frozen Yogurt Strawberry Lemonade Pie
Our kids summer’s may be coming to an end, but that doesn’t mean that this heat is letting up. It’s hot, humid and all I want to do is eat ice cream, and lots of it. So instead of running to the corner store for another pint of fatty Ben and Jerry’s, I made a cool and refreshing lemonade pie with Yoplait® frozen yogurt.
For this healthier ice cream pie, I started by making a crust with stale waffle cones crushed in my food processor with a little melted butter, the same way you would make a graham cracker crust. Then I pressed the shell into a spring form pan. Next I mixed two containers of softened Yoplait® frozen strawberry yogurt with a tub of whipped topping and some strawberry lemonade mix.
After I add the filling to the pan, I place the pie in the freezer to set up. Before serving, I make a quick and easy strawberry sauce from fresh strawberries in my food processor to pour on top of the pie before serving.
For the photos, I added all the sauce to the pie, but only add the sauce to the pie you serve. Freezing this sauce makes it turn to a hard strawberry ice.

Yoplait® Frozen Yogurt Strawberry Lemonade Pie
Ingredients:
For the crust:
1 cup crushed waffle ice cream cones
2 tablespoons melted butter
For the filling:
2 (1 pint) containers Yoplait® Original Frozen Yogurt Strawberry
1 (8oz tub) whipped topping
1/2 cup strawberry lemonade powder mix
1/4 cup warm water
For the topping:
2 cups chopped strawberries
2 tablespoons sugar
Directions:
Combine crushed ice cream cones and butter in a food processor and mix until well combined. Press crust into a spring form pan.
Combine Yoplait Frozen Yogurt and whipped topping together in a large bowl. In a separate bowl, combine strawberry lemonade mix with warm water and mix well to combine. Then add to large bowl with whipped topping and frozen yogurt.
Using an electric mixer, mix all ingredients until well-combined. Pour mixture into spring form pan on top of crust. Place pie in freezer and freeze for 3 - 4 hours, or until set.
For the topping, place 1 cup strawberries in a food processor or blender with sugar. Blend until smooth. Add the remaining berries and pulse until berries are slightly chopped. Sauce should be chunky. Place strawberry sauce in refrigerator until ready to serve.
Before serving, pour strawberry sauce over pie.
Tips:
For a strawberry pie, you can omit the lemonade mix and water in this recipe.
More sugar can be used in the strawberry sauce if it’s not sweet enough for your tastes.
