Ice Cream Sandwich Cake
This past weekend, we had some our family in town. It was so nice spending quality time together. We usually hit the theme parks, but decided to have a more low key visit this year and do something more relaxing. So Saturday we took the boat out on the river and stopped at the springs. It was a beautiful day and despite a few rain showers, we had great weather.
When we got back home, we were all craving ice cream, so I decided to put something special together. I took a box of my favorite ice cream bars, Blue Bunny, and with a little Cool Whip and chocolate sprinkles, and made a little magic. This is the easiest little frozen cake and took me all of maybe 5 minutes to put together.
I thought this was also a great way to celebrate Ice Cream and Novelties Month, which is this month! I started this cake by just unwrapping all the ice cream sandwiches. I put four on the bottom, spread on some Cool Whip and then added 4 more ice scream sandwiches and more Cool Whip. To top things off, I just added a few chocolate sprinkles. Now how easy is that!
You can change this cake up by using chopped up Oreo cookies, colorful sprinkles or chocolate syrup and M&M’s. You can even use some fresh berries, yum! Also, you change the size to make an even bigger cake for a larger crowd or maybe even a summer birthday party. You’re only limited by your imagination!

Ice Cream Sandwich Cake
Ingredients:
1 (8-ct) box Blue Bunny ice cream sandwiches
1 (8 oz) tub Cool Whip
Sprinkles, Oreos, M&M's, or fresh berries
Directions:
Arrange 4 ice cream sandwiches on a platter. Spread Cool Whip on top. Add 4 more ice cream sandwiches and spread more Cool Whip on top.
Garnish with sprinkles. Return to freezer for at least 15 minutes before serving.
Slice to serve.
