Spinach, Artichoke & Sun-dried Tomato Panini

paninis

For the past several months, I’ve been on a panini kick. Every day for lunch I make something different in my panini press. I hadn’t used my press for a couple of years, but a few months ago I pulled it out of the depths of the pantry and put it to good use again.

artichoke and tomatoes

Today I made a simple spinach, artichoke and sun-dried tomato panini using Mezzetta® Sun-Dried Tomato Spread and Mezzetta® Grilled Artichokes. The tomato spread gave so much added flavor to my sandwich, while the grilled artichokes were just too good for words.

Mezzetta® has a whole line of different olives, peppers, sandwich spreads, pickled vegetables and different sauces. I especially love some of their peppers. They add a wonderful punch to deli sandwiches.

Right now, Mezzetta® is hosting the $25,000 Mezzetta® Make That Sandwich™ Contest. And I’ve created this simple panini to help inspire you! Unfortunately I can’t enter, but you can! And it’s incredibly easy to enter. Just create your own original sandwich using at least two (2) Mezzetta products, and then enter your recipe at MakeThatSandwich.com.
