Cobb Salad Wraps

One of the goals we set for 2019 was to make homemade lunches everyday. Even though I’m really good about making the kids their lunches, my husband and I usually get so busy during the day we often resort to fast food or just skip lunch all together. Neither way is healthy, and we both wanted to do better.

To make this wrap I first start with a spinach wrap and spread on a little ranch dressing. Be sure to use a light or yogurt version to save on calories. Next I layer on the Prime Fresh Smoked Turkey and then the tomato, avocado, hard-boiled eggs and bacon.
To save some more calories, you can use turkey bacon. I’m always watching our salt intake, so I make sure to use low-sodium bacon. It tastes great and is a nice compromise between traditional bacon and turkey bacon.
To finish these, I just add some lettuce and roll them up. They’re so easy to do and packed with protein. They make perfect lunches for busy people on the run, or very hungry pre-teens like my son!

Cobb Salad Wraps

Ingredients:
- 1 package Prime Fresh Delicatessen by Smithfield in Smoked Turkey
- 1 medium hass avocado, sliced
- 2 hard boiled eggs, sliced
- 1 medium tomato, sliced
- 4 pieces lettuce
- 8 sliced bacon, cooked crisp
- 4 tortilla wraps
- 4 teaspoons light ranch dressing
Directions:
Assemble wrap by spreading on a light layer of ranch dressing on tortilla or wrap. Then layer on 2 slices of Prime Fresh Delicatessen by Smithfield in Smoked Turkey. Next layer on sliced hard boiled eggs, sliced avocado, tomato and crisp bacon. Add fresh lettuce.
Roll up wrap and sliced in half to serve!
