Thai Flatbread Pizza
At least one night a week during the month of December, my family has a Christmas movie nights. It’s when we have a marathon of 2 – 3 Christmas movies and have pizza, popcorn and hot chocolate. For this week’s Christmas movie night, we enjoyed these Thai pizzas made with Flatout Bread.
Since our son is now 5, he’s really getting into the Christmas movies. This week we watched Rudolph the Red-Nosed reindeer, Shrek the Halls and Frosty the Snowman. Of course my son liked the newer Shrek movie the best. I think I may have liked it the best too, because it’s about how to find joy in a Christmas filled with imperfect friends and unforeseen circumstances.
These pizzas are made with Flatout Bread’s new Thin Crust Flatbreads Artisan Pizza. This new flatbread is perfect for pizza. It comes in 4 great flavors: rosemary and olive oil, spicy Italian, rustic white and heritage wheat. They come in a pack of six, and make a perfect 1 serving little pizza for everyone in the family.
For the sauce on these pizzas, I just sued sweet chili Thai dipping sauce. It’s not too spicy for little ones, but is still loaded with flavor. Then I added pre-coked chicken and shredded cheese. I bake them at 450° for several minutes, and then just as soon as they come out of the oven, I top them with fresh bean sprouts, matchstick carrots, fresh cilantro and green onions.

Yield: Serves 4
Thai Flatbread Pizza
Ingredients:
4 pieces Flatout Bread's new Thin Crust Flatbreads Artisan Pizza
8 tablespoons sweet Thai chili dipping sauce
1 cup chopped grilled chicken
2 cup shredded mozzarella cheese
1/2 cup bean sprouts
1/2 cup matchstick carrots
1/4 cup fresh cilantro
1/4 cup sliced green onions
Directions:
Heat oven to 450°. Place flatbread on a large cookie sheet. Spread 2 tablespoons of sweet Thai chili sauce on each piece of flatbread. Divide chicken and shredded cheese over pizzas. Bake for 5 - 8 minutes, or until golden brown and crisp.
Remove from the oven when done and top with sprouts, carrots, cilantro and green onions.
