Breakfast for Dinner: Chicken and Waffles Charcuterie Board

Dinner doesn’t have to be boring and the same every week. You can create your own rules to have more family fun at dinner time. Getting kids to eat new foods is easiest when you think outside the box like making breakfast for dinner!

Breakfast for dinner is a favorite in our home. We change it up every week and do something new and exciting. This week we made this fun Chicken and Waffles Charcuterie Board. It was quick and easy, and the whole family loved it. It’s was so much fun to make these family favorite breakfast items for everyone to enjoy after a long day of school and work.

For this adorable Waffle Charcuterie Board, I made my favorite waffle recipe that I included below. I make this recipe pretty often. Not only do I make it both for lunch and dinner, but I also triple and quadruple this recipe to make freezer waffles for the family. This is a fool-proof recipe I’ve been using for years.

I’ve also included fresh fruit, yogurt, granola, and Jimmy Dean® Fully Cooked Sausage on our Charcuterie Board to pair with my waffles. A quick and easy recipe for the best homemade waffles.

Ingredients:

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil plus additional oil or oil spray for waffle iron
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Optional:

  • blueberries, chocolate chips or chopped nuts

Directions:

Preheat waffle iron. Add flour, milk, vegetable oil, eggs, sugar, baking powder, salt and vanilla in a large bowl. Mix just until smooth.

Spray or brush preheated waffle iron with oil spray. Pour waffle batter onto hot waffle iron. Cook until golden brown.
