Caribbean Chicken and Pineapple
With all this summer heat and craziness, I’ve been feeling really lazy. I feel like I’ve been dragging myself into the kitchen every night. I’ve really not been in the mood to cook, much less clean up all those dirty dishes after dinner.
So instead of starting to going out to dinner every night, I’ve been trying to rack my brain for the simplest recipes. So I’ve went back to the basics, and started re-create recipes that I made when we first got married. This Caribbean Chicken one of those recipes.
This recipe used to be a baked chicken recipe, but I thought it would be better grilled. So instead of going out in the heat, I used my little grill panini press to make this chicken.
To make sure the chicken didn’t stick, I used PAM grilling spray. After I sprinkled the seasoning on my chicken, I sprayed the chicken with PAM before placing it on the grill. I prefer to spray the meat instead of the grill to reduce smoke and flare-ups when working on the outside grill.
After the chicken was done, I lightly grilled the pineapple. To serve I placed the pineapple on the chicken and served with some fresh salad greens. It made a perfect easy and healthy family dinner.

Caribbean Chicken and Pineapple
Ingredients:
2 boneless, skinless chicken breasts, halved lengthwise
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon red pepper flake (optional)
PAM Grilling Spray
4 slices fresh pineapple
Directions:
Sprinkle seasonings on both sides of chicken breasts. Spray PAM Grilling Spray on each side of chicken. Preheat skillet or grill over medium heat.
Cook chicken until done and juices run clear.
Cook pineapple slices until lightly browned.
Serve pineapple over chicken.
