Slow Cooker Cajun Pulled Pork

I just can’t help myself when it comes to pork. It seems like almost every month I make a pork shoulder, either in my slow cooker, or slow roasted in the oven. Slow roasting in the oven is wonderful, but it’s tedious and takes forever. I much rather use my slow cooker. I can just set it and forget it.

This time I made a Cajun style slow cooker pulled pork. I used my own blend of Cajun seasonings. You can use my recipe, tailor a Cajun inspired seasoning blend to your own tastes, or buy any number of incredible Cajun seasoning blends on the market. I also added liquid smoke for a wonderful smoky flavor and a bit of sweetness with brown sugar.

I also made a simple Cajun inspired cole slaw to along with this pork. I used grainy mustard, hot sauce and Worcestershire to add lots of flavor. I also used Greek yogurt in place of mayonnaise to save on fat. The yogurt also adds a nice tang to the slaw.

The only thing I don’t look forward to when making pulled pork in the crock pot is the cleanup afterwards. I always get a yucky black stuck on mess around the sides in my slow cooker. And since my slow cooker’s bowl is black, it makes me especially crazy when I’m trying to clean it. Fortunately, I found these slow cooker liners from Reynold’s. They seem to be made from the same or similar high quality plastic that their oven bags are made from. This was the first time that I had used these slow cooker bags, and I can’t tell you how impressed I was.

Reynolds Slow Cooker Liners are super easy to use. You just line your slow cooker with them, them after your slow cooker is cooled, just toss the mess away. I’m so glad I don’t have to soak and scrub my slow cooker bowl anymore.

Slow Cooker Cajun Pulled Pork

Ingredients:

Slow Cooker Cajun Pork Recipe:
3 - 4 lb pork shoulder
3 tablespoons Cajun Seasoning (store-bought or recipe that follows)
1 teaspoon liquid smoke
1 tablespoon apple cider vinegar
1 cup water
4 cloves garlic
2 medium onions
2 tablespoons brown sugar
Reynolds™ Slow Cooker Liners

Cajun seasoning Recipe:
5 tablespoons smoked paprika
4 tablespoons kosher salt
4 tablespoons garlic powder
2 tablespoons black pepper
2 tablespoons onion powder
1 tablespoon cayenne pepper
2 tablespoons dried oregano
2 tablespoons dried thyme
2 tablespoons cumin

For Cajun Cole Slaw:

1/2 a medium savoy cabbage, shredded
1 carrot, shredded
1/2 onion, sliced thin
2 tablespoons apple cider vinegar
1 tablespoon grainy mustard
1 teaspoon Worcestershire sauce
1 teaspoon Louisiana hot sauce
1/3 cup mayonnaise or Greek Yogurt
1 clove garlic, minced

Additional ingredients:
Slider rolls (I used water rolls from my grocer's bakery)
Your favorite BBQ sauce

Directions:

Open slow cooker liner and place it inside the slow cooker bowl. Fit the liner snugly against the bottom and sides of the bowl; pull top of liner over rim of bowl.

Place all ingredients in slow cooker first, then turn on slow cooker. Place lid on slow cooker.

Turn to low for 8 - 10 hours, or high for 6 - 8, or until pork is falling apart.

Combine all ingredients for slaw and mix well. Refrigerate until ready to serve.

When pork is done, carefully remove lid to to allow steam to escape. Serve pork toped with slaw on slider buns.

Cool slow cooker completely; remove liner and toss.
