Blueberry Vanilla Stuffed French Toast

My Dad use to make three things when I was a kid – steak on the grill, navy bean soup and French toast. And my favorite of course was his French toast. He made the absolute best French toast I’ve ever had. He always used a real French baguette and never too much sweetness. Being a military man, he always woke up early and at least once a week I’d awake to the smell of him making the most glorious French toast topped with fresh fruit and drizzled with maple syrup.

Now that I have kids I’m trying to carry on that love I shared with my Father for French toast too.  Many times I make French toast the traditional way, but I also like to change it up every once in a while. This French toast casserole is a favorite for my kids and it’s so easy for me to make. I can make it the night before and place it in the fridge overnight to bake in the morning. I love it!

This casserole is made simply with a day old French baguette, eggs, milk, blueberries, vanilla and Dunkin’ Donuts® Extra Extra Creamer. Just chop up the bread and combine it with all the other ingredients and place it in a casserole dish. Then place it in the fridge overnight so that all the bread socks up the liquid.

The next morning just place the casserole in the oven and bake for about 45 minutes or until it’s golden and set. I like to serve this with warm maple syrup and a little whipped cream too, because why not! Your whole family will love this casserole and it’s also perfect to make when you have company stating at your house. It makes the whole house smell wonderful.

This is a quick and easy recipe for a delicious Blueberry stuffed French Toast that the whole family will love!

Ingredients:

  • 1 day old French Baguette, cut in chunks
  • 1 pint blueberries
  • 1/2 block (4oz) cream cheese, cut in pats
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup Dunkin' Donuts® Extra Extra Creamer

Directions:

Add eggs, milk, Dunkin' Donuts® Extra Extra Creamer and vanilla extract to a large bowl. Whisk well. Add chopped Baguette and blueberries. Fold in and place and pour into an 8x8 casserole dish.

Top with the pats of cream cheese and cover with saran wrap. Refrigerate overnight or for at least 3 hours until the bread has absorbed all the liquid.

Heat oven to 350°. Bake casserole at 350° for 40 - 45 minutes, or until center is set. Tent with aluminum foil if casserole is browning too quickly.
